I’ve been trying to cook at home more often, especially since beginning freelancing in May. It feels like I’m revisiting lifestyle choices I made when I was in Minneapolis (how do I exist off of as little money as possible, while still being, y’know, okay?). Except now, I think I’m doing a good job.
Justin is very good about looking up how to cook things. A few years ago, we admitted we were starting from scratch on a lot of cooking skills, and I really admire his diligence on learning how to do each part of cooking the right way. Thanks to him, I’ve become a little more diligent too. It has paid off! I’m proud of some of the meals we’ve been making.
My favorite meal this week was balsamic chicken, mushrooms+onions+kale, and garlic couscous. The maybe…two times I’ve made couscous that was genuinely delicious felt like accidents. So, couscous is the next food thing I really want to figure out.
